Ingredients

  • 2oz of The Scarlet Ibis Rum
  • 3/4oz Pineapple Juice
  • 3/4oz Velvet Falernum
  • 3/4oz Lime Juice
  • Peychaud’s Bitters

Method

  1.  Add the Rum, Pineapple Juice, Lime Juice, and VF to a tin. 
  2. Add enough bitters to get what resembles a red oil spill on top of the drink, but not completely cover it
  3. Add ice to your tin and skae until the tin is too cold to handle
  4. Strain into a Nick and Nora glass, reserving the extra in a rocks glass without ice or with a whiskey stone

Notes

  •  The Scarlet Ibis can be hard to find in the best scenarios due to a recent increase in demand. You can substitute it with a funkier Jamaican-style rum such as Appelton Estate
  • This is a good drink for introducing friends who are not used to funkier rums, or even think that they are not fans of the spirit, to it.
